The story behind Liokarpos an authentic extra virgin olive oil

Mories Organization is glad to present you- Liokarpos a product of 5th generation of cultivation and harvesting the olives at the region of Foinikounta, Greece. The microclimate of the area in combination with the morphology of the ground has a significant role in ensuring that the family consistently produce an exceptional crop. The variety of the olives are Koroneiki, it creates  the most common variety for oil production and covers 50-60% of the acreage in Greece. Known for its regal, small fruits, but having a high quality oil yield, Koroneiki olives are among the most common and suitable for super-high density growing systems around the world. Highly prized for its aromatic, strongly flavored oil, Koroneiki olives are perfect for enjoying in their natural raw state or added at the end of cooking.

What sets Koroneiki variety apart when referring to the seed and the olive oil produced is the unique method of olive farming. Koroneiki olives are harvested when they are still green – from November by the end of December.

In order to ensure the fine quality of the final product and to gain the title of “early picked” or “green” olive oils, they are being handpicked with care. Unlike many other varieties, these trees have no artificial additives interventions not to mention that they are pruned intensively once a year to keep them small in size.

The mere 3 to 5 litres of the green gold liquid that is produced from a Koroneiki olive tree proves the obvious. Quantity is sacrificed in favour of quality.

Heralded with high polyphenols (antioxidants) which is a great support for the immune system, as they reduce the risk of heart disease and cancer according to researches. 

The Koroneiki olive variety was named after the historic town of Koroni, in the Messinia region of the Peloponnese. Its organoleptic characteristics have ranked it in the extra virgin category of olive oils which is characterized by certain special features, such as an exceptionally low acidity, a deep, bright green color with a bittersweet taste and a smooth taste feeling of various fruits.

This is exactly what Liokarpos is.

The olives are being transported in plastic crates to preserve their quality and are then taken to a nearby mill within hours of picking, in order to maintain all beneficial characteristics.

The olives are immediately cold pressed and malaxed less than 20 minutes in order to preserve their spicy flavour and distinct aroma. This Koroneiki Extra Virgin Olive Oil is stored in small stainless steel tanks with nitrogen (N2) gas feeding equipment and cooling jacket coverage to maintain temperature stabilization and preservation.

Liokarpos extra virgin olive oil has remarkable rates of monounsaturated fatty-acids, vitamins and valuable antioxidants such as polyphenols, which are known to help fortify the immune system and to provide many health benefits. It is offered in three sizes of bottles 0,250 ml, 0,500 ml and 0,750.
