The idea begun years ago when the grandmother, wanted to made it healthier at breakfast, was preparing bread with pure olive oil and honey.
Honey in the family is produced by their own beehives, which maintain for four generations in the province of Sitia.
The Olive Oil in the family is produced from privately owned olive trees and it is characterized as Extra Virgin Olive Oil PDO Sitia.
The technique of spherification is to give an extra touch to the journey that began in molecular gastronomy.
The resultant spheres they created have a thin film filled with extra virgin olive oil PDO Sitia.

When you taste a teaspoon of honey and olive oil spheres by making a slight tongue pressure on the sphere, it burst and release an amazing burst of flavor.
Also, by spraying on the bread, the spheres are exploded and homogenised with the honey. A result that excites the taste.
