Summer salad with strawberries

A bright, pleasing dish just perfect for summer evenings and brunch.

Ingredients

  • 5 strawberries cut into four
  • 100g watermelon cut into cubes
  • 100gr Feta cut into cubes
  • 5 chopped mint leaves
  • 30g roasted pine nuts
  • 50g Valerian
  • Salt
  • Pepper
  • balsamic vinegar
  • 5 tbsp. ΕFKRATO early harvest extra virgin olive oil

Step-by-step

  1. Wash and clean the strawberries, cut them in halves and add to large bowl
  2. Clean a slice of watermelon from the seeds and cut in cubes
  3. Add feta cheese, cut in cubes
  4. Chop mint leaves and add them
  5. Prepare a mix of balsamico vinegar, Efkrato Early Harvest Extra Virgin Olive Oil, salt , pepper and Valerian. Whisk together the dressing ingredients, season to taste and drizzle over the salad.
  6. Decorate with roasted pine nuts
